Garlic Scapes

We take the flowering tip, called the scape, off the garlic plant to encourage the root growth which is the head of cloves that is commony eaten.

People cook with the scape: it makes an excellent pesto; we mix it with lamb to offer it as Garlic Scape Lamb Sausage in late June on Saturday at the Union Square Greenmarket. Stop by and try some when the grill is hot from 10:30 AM to 4PM or anytime during the day to buy some fresh garlic scapes sold by the pound.
